Put the chicken into the bowl and rub the marinade into the chicken making sure all of it is covered.
750 g chicken
This is where I leave the chicken to absorb the flavours fully so in the fridge for a few hours in possible.
Cover a sided baking tray with foil.
Transfer the chicken and the marinade to the baking tray and cover with another piece of foil(prevents the chicken from catching and burning.)
Place in the oven and bake for 20 minutes or until the chicken thighs are cooked. During the cooking, I like to baste the chicken in any juices and marinade in the bottom of the pan. All extra flavour.
Remove from the oven and remove the top piece of foil.
Place under the grill/broiler for about 2 minutes or until the chicken has started to char.
Remove from the grill/broiler and transfer the chicken to a warmed dishes.
Serve with lovely fluffy rice, sprinkled with chopped parsley and the lime wedges.
