Quick Honey and Lime Chicken is a simply lovely recipe that is ready within 30 minutes. If you have time, make in advance leave to marinade. The chicken is moist and full of flavour with the sticky honey and kick of both lime and the cayenne pepper. Always use chicken that has a skin on. It adds to the colour, texture and flavour when grilled/broiled. I have used Chicken thighs, quarters and breasts and even a whole chicken (spatchcock) on a BBQ.

  • Preheat your oven to 200C/400F/Gas Mark 6
  • In a glass bowl, combine the garlic, soy sauce, honey, cayenne pepper, lime juice and salt and mix well.
  • Put the chicken into the bowl and rub the marinade into the chicken making sure all of it is covered.
  • This is where I leave the chicken to absorb the flavours fully so in the fridge for a few hours in possible.
  • Cover a sided baking tray with foil.
  • Transfer the chicken and the marinade to the baking tray and cover with another piece of foil(prevents the chicken from catching and burning.)
  • Place in the oven and bake for 20 minutes or until the chicken thighs are cooked. During the cooking, I like to baste the chicken in any juices and marinade in the bottom of the pan. All extra flavour.
  • Remove from the oven and remove the top piece of foil.
  • Place under the grill/broiler for about 2 minutes or until the chicken has started to char.
  • Remove from the grill/broiler and transfer the chicken to a warmed dishes.
  • Serve with lovely fluffy rice, sprinkled with chopped parsley and the lime wedges.
