Absolutely Delicious Cheesecake is a cheats version for a quick, effortless yet full of flavour cheesecake. While the normal recipe uses crushed biscuits such as digestives or ginger nuts, this uses a pie base.
What makes this cheesecake particularly appealing is how little effort it takes to create something that feels like a proper homemade dessert. The ready-made pie crust removes one of the more time-consuming parts of traditional cheesecake preparation, while the creamy filling provides plenty of richness and flavour. It is a clever shortcut when you want dessert on the table without spending hours in the kitchen.
The combination of cream cheese, sour cream and vanilla creates a smooth, creamy centre with a gentle tang that balances the sweetness. Meanwhile, the cherry topping brings a bright fruity flavour and an attractive splash of colour. As a result, each spoonful has a pleasing contrast between the soft filling, crisp crust and juicy cherries.
This is also a wonderfully flexible dessert for entertaining. You can prepare it ahead of time, then leave it chilling until your guests are ready for something sweet. That makes it particularly useful after a larger meal when you would rather spend time with everyone than disappear into the kitchen. It also travels reasonably well when kept properly chilled, making it a handy choice for family gatherings and shared meals.
Although cherries are the classic topping here, there is plenty of room to experiment. Blueberry, strawberry or raspberry pie filling can give the cheesecake a completely different character. For a little extra texture, try scattering toasted nuts over the top just before serving. A few fresh berries or a small sprig of mint can also make each slice look more special.
For the best result, give the cheesecake plenty of time to become thoroughly chilled. The filling firms as it rests, making the slices easier to serve and giving the flavours time to settle together. Serve it straight from the refrigerator, perhaps with a little extra fruit alongside, and you have an effortless dessert that looks far more complicated than it really is.

I made this for a birthday dinner and it went down extremely well. Several people asked me for the recipe before the evening was over.
I was slightly worried that the cheesecake would be too sweet, but the sour cream gave it a lovely tang. The cherry topping worked perfectly.
A lovely easy cheesecake that tasted much more impressive than the effort involved. The filling was smooth, rich and beautifully balanced.
I found the cherry topping a little sweet for my taste, so next time I might use fresh cherries instead. Otherwise, the cheesecake itself was excellent.
I substituted strawberry topping for the cherries and added a few fresh strawberries before serving. It looked beautiful and tasted even better.
A delicious cheesecake that requires very little fuss. The texture was exactly what I hoped for, and the cherry topping looked lovely.
This is one of those desserts that looks like you spent much longer making it than you actually did. Very easy and very tasty.
I added some finely chopped toasted almonds over the top and loved the extra crunch. It also gave the cheesecake a more finished appearance.
This cheesecake was creamy, fruity and satisfying without being overly complicated. It has definitely earned a place in my regular dessert collection.
A fantastic dessert for entertaining because it can be prepared ahead. I made mine the day before and it was even better after a long chill.
I thought the cheesecake was excellent, although I would personally use slightly less topping next time. The filling itself was delicious.
I used a biscuit base rather than the suggested pie crust and was very pleased with the result. The creamy filling paired beautifully with the crunchy base.

I made this for a family gathering and everyone enjoyed it. I especially liked how the cherries cut through the richness of the cream cheese.
This cheesecake was incredibly creamy and disappeared from the table very quickly. The cherry topping added just the right amount of fruity sweetness.
This was a real crowd-pleaser. The combination of the creamy filling and crisp crust made every bite delicious.
I used raspberry topping instead of cherry and thought it was delicious. The sharpness of the raspberries worked especially well with the rich filling.
I added a little grated lemon zest to the filling and really enjoyed the extra freshness. It gave the cheesecake a slightly brighter flavour.
My family absolutely loved this cheesecake. The children particularly enjoyed the cherries, while the adults appreciated how creamy the filling was.
This made a brilliant weekend dessert. I prepared it in advance, left it chilling and simply brought it out when we were ready to eat.
