Shortcrust is used for the bases of tarts, pies and quiches and can be both savoury and sweet. Such as Ham and Leek Quiche and Lemon Meringue Pie. Butter Puff is light, flaky, buttery pastry. Imagine a tart without it? How about a quiche without it would be an omelette.
