Chocolate and Cherry Swiss Roll

Indulgence takes on a refined form with the Chocolate and Cherry Swiss Roll. This simple confection that embodies sophistication and taste in equal measure. Within its unassuming exterior lies a decadence waiting to be discovered, making it a perennial favourite among discerning dessert enthusiasts. Regardless of what you normally have, this recipe is one that must be tried to fully appreciate the amazing textures and flavours.

The Chocolate and Cherry Swiss Roll is a masterpiece of culinary craftsmanship, where every element is meticulously crafted to perfection. At its heart lies a light and fluffy sponge cake, imbued with the cocoa essence creating a chocolatey goodness. Soft yet resilient, the sponge does indeed provide the ideal canvas for the exquisite flavours that follow.

Nestled within the folds of the sponge is a sumptuous filling of whipped cream. The creamy texture offering a delightful contrast to the rich intensity of the chocolate. But the true stars of this culinary symphony are the cherries – plump, juicy, and bursting with flavour. Their natural sweetness, accented by a subtle hint of tartness, adds a tantalizing depth to every bite. I have used tinned cherries as well in this recipe, just drain the juices well to prevent a soggy sponge!!

Surprisingly, it is the finishing touch that truly sets the Chocolate and Cherry Swiss Roll apart. A generous drizzle of velvety chocolate ganache cascades over the surface, enveloping the entire creation in a cloak of indulgence. With its deep, luxurious flavour, the chocolate ganache provides the perfect counterpoint to the brightness of the cherries. The result is a perfect blend of tastes and textures that is nothing short of sublime.

To partake in a slice of Chocolate and Cherry Swiss Roll is to experience the epitome of indulgence. In other words, each bite is a total delight, where every nuance of flavour is savoured and experienced. Serve as a cake, dessert or as a snack, this timeless delicacy never fails to captivate hearts and tastebuds alike.

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 10×15-inch baking sheet and line it with parchment paper, leaving some overhang on the sides.
  • In a large mixing bowl, beat the eggs and granulated sugar together using an electric mixer until pale and fluffy, about 5 minutes. Add the vanilla extract and mix until combined.
4 large eggs, 1/2 cup granulated sugar, 1 tsp vanilla extract
  • In a separate bowl, sift together the cocoa powder, flour, baking powder, and salt. Gradually fold the dry ingredients into the egg mixture until just combined, being careful not to deflate the batter.
1/4 cup cocoa powder, 1/4 cup all-purpose flour, 1 tsp baking powder, 1/4 tsp salt
  • Pour the batter onto the prepared baking sheet, spreading it evenly with a spatula. Bake in the preheated oven for 10-12 minutes, or until the cake is set and springs back when lightly touched.
  • While the cake is baking, whip the heavy cream and powdered sugar together until stiff peaks form. Set aside.
1 cup heavy cream, 2 tbsp powdered sugar
  • Once the cake is done, remove it from the oven and immediately lift it out of the pan using the parchment paper overhang. Place it onto a clean kitchen towel.
  • Carefully peel off the parchment paper from the cake. Spread the whipped cream evenly over the surface of the cake, leaving a small border around the edges.
  • Sprinkle the chopped cherries evenly over the whipped cream layer.
    1 cup cherries
  • Starting from one of the shorter ends, gently roll the cake up tightly with the help of the kitchen towel. Place the roll seam-side down on a serving platter.
  • In a small saucepan, melt the dark chocolate chips and butter together over low heat, stirring until smooth. Drizzle the chocolate ganache over the top of the Swiss roll.
1/2 cup chocolate chips, 2 tbsp unsalted butter
  • Dust the top of the Swiss roll with powdered sugar for an extra touch of elegance.
    1 tbsp powdered sugar
  • Refrigerate the Swiss roll for at least 30 minutes before slicing. Serve chilled and enjoy!

A gorgeous dessert for a special occasion. The chocolate and cherry combination reminded us of Black Forest cake but in a lighter Swiss roll.

Really nice balance of flavours. The chocolate is rich while the cherries bring a fresh fruity note that makes the dessert feel lighter.

I used drained tinned cherries and they worked perfectly. Just as the recipe suggests, I made sure they were well drained and the sponge stayed lovely and soft.

A lovely recipe for chocolate lovers. It has plenty of chocolate flavour but the cherries stop it from becoming too heavy.

I made this for guests and it disappeared very quickly. It looked elegant and tasted even better than it looked.

The flavour was excellent and not too sweet. I particularly liked the slight tartness from the cherries against the chocolate sponge.
