Fresh Corn Fritters are flat pancake like fritter made fresh from the cob. They are a perfect addition to meals an like other fritters have a crunchy coating over a soft centre. These are amazing simple to prepare and ideal served as a side dish and snacks. This recipe is a good way of using spare up sweetcorn. It doesn’t matter if its on the cob or tinned, they both work.

  • Cut the corn kernels from the cobs, scraping the cobs and reserving as much of the liquid as possible.
    6 large sweet corn
  • Fold the kernels and liquid into the egg whites and add the salt and pepper.
    3 large egg whites, salt, ground black pepper
  • Drop by tablespoonfuls on a lightly greased griddle or non-stick skillet over moderate heat.
  • Cook for about 2 minutes on each side, until golden brown.
