Instructions
Chop the cherry tomatoes into small pieces using a salad knife.
10 fresh cherry tomatoes
Stir the chopped tomatoes together with the chopped spring onions, cucumber, mango and sweetcorn.
½ ripe mango,
2 large spring onions,
½ large cucumber,
½ cup sweetcorn
Mix in any chopped herbs you want to add, with a teaspoon of olive oil and have a taste.

Add a squeeze of lemon or a pinch of sugar to taste.
