blueberries
can use frozen if thawed
Instructions
Heat oven to 350 degrees. Grease bottom only of loaf pan, 9 by 5 by 3 inches.
Crush cereal. (Place cereal in plastic bag or between sheets of waxed paper; crush with rolling pin. Or crush in blender or food processor.)
1 cup fiber cereal
Stir together cereal, water, orange peel, orange juice and vanilla in large bowl; let stand 10 minutes.
3/4 cup water,
1 tbsp orange peel,
1/4 cup orange juice,
1/2 tsp vanilla
Stir in remaining ingredients except blueberries.
2 cups all-purpose flour,
1 cup sugar,
1 1/2 tsp baking powder,
1/2 tsp baking soda,
1/2 tsp Salt,
2 tbsp vegetable oil,
1 large eggs
Gently stir in blueberries. Pour into pan.
Bake 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaf; remove from pan.
Cool completely before slicing.
