Instructions
Melt butter/oil in a large, heavy frying pan.
2 tbsp unsalted butter
Add jalapeno peppers, green peppers, red peppers and onions and saute until onions become transparent.
1 medium jalapeno pepper,
1/3 cup green peppers,
1/3 cup red peppers,
1/3 cup onion
Season with salt, pepper, Tabasco and cilantro.

1/2 tsp salt,
1/4 tsp pepper,
1 tsp cilantro
Add a separate pan to the stove and pan fry mushrooms in a little butter and a pinch of salt and when cooked, put to one side to keep warm
100 g mushrooms
Beat eggs with 1 Tablespoon of water and slowly pour throughout the sauteed mixture.
5 large eggs
Simmer covered over low heat until the eggs are set.
Add cheese to one side and carefully flip the other side over.
1/3 cup cheddar cheese
Remove from heat and cover for an additional minute to melt the cheese completely.
