Cook the noodles according to package instructions until al dente. Drain and set aside.
8 oz noodles
In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, rice vinegar, honey, minced garlic, and grated ginger to make the sauce. Set aside.
Heat 1/2 of oil in a large skillet or wok over medium-high heat. Add the sliced sausage and cook until browned and cooked through, about 5-7 minutes. Transfer the sausage to a plate and set aside.

In the same skillet, add the other 1/2 tablespoon of oil. Add the bell pepper, mushrooms, and carrots, and stir fry for 3-4 minutes until slightly softened.

Add the peas and cooked sausage back to the skillet, along with the cooked noodles and the prepared sauce. Stir well to combine and coat everything in the flavourful sauce.

If desired, add the corn starch slurry (corn starch and water) to the skillet to thicken the sauce. Continue to cook for an additional 2-3 minutes, until the sauce has thickened slightly and everything is heated through.
1 tbsp corn starch, 2 tbsp water
Garnish with chopped green onions and sesame seeds, if using. Serve hot and enjoy!
