In a bowl, whisk together the flour, baking powder and salt.
100 g plain flour, 1 tsp baking powder, 1 pinch salt
In a separate bowl, combine the milk, egg and melted butter. Gradually add the wet mixture to the dry ingredients, whisking until smooth.
150 ml milk, 1 large egg, 20 g butter
The batter should be thick but pourable. Set aside for 10 minutes to rest.
Heat a little butter in a non-stick frying pan over medium heat. Spoon small rounds of batter (about a tablespoon each) into the pan, leaving space between them.
Cook for 1–2 minutes until bubbles form on the surface, then flip and cook for another minute until golden. Transfer to a plate and allow to cool.
In a mixing bowl, combine the diced shrimp, mayonnaise, lemon juice, capers, gherkins, mustard, and shallot.
Season with salt and pepper to taste. Mix until well combined.

Place the cooled blinis on a serving platter. Spoon a small mound of the shrimp mixture onto each blini.
