Crack the eggs into a bowl and add the milk or cream. Season lightly with salt and freshly ground black pepper.
4 large eggs, 2 tbsp milk, salt, Freshly ground black pepper
Beat the eggs gently with a fork until the mixture is combined but not overly frothy.
Place a non-stick frying pan over a low to medium heat and add the butter.

Once the butter has melted, pour in the beaten eggs.
Allow the eggs to sit for a few seconds, then gently stir with a wooden spoon or spatula.
Continue stirring slowly, allowing soft curds to form. Keep the heat relatively low so the eggs remain tender and creamy.
Remove the pan from the heat while the eggs still look slightly undercooked. The residual heat will finish cooking them without making them dry.
Stir through most of the chopped chives and dill, reserving a little for garnishing.
Toast the bread until golden and crisp.
Divide the scrambled eggs between two plates and arrange the smoked salmon alongside.

Scatter the remaining fresh herbs over the eggs and salmon.

Serve immediately with the warm toast and lemon wedges.

Notes
For a relaxed brunch, serve with fresh fruit, roasted tomatoes or a simple green salad. A pot of freshly brewed coffee or tea makes an excellent accompaniment.
