Scrambled eggs and smoked salmon is a simple, elegant and wonderfully satisfying without ever becoming too heavy. For me, it is exactly the sort of dish that makes a relaxed brunch feel like an occasion.
The beauty starts with the eggs. Good scrambled eggs should be light, soft and fluffy rather than firm or dry. When cooked gently, they develop a delicate texture that practically melts in the mouth. A scattering of fresh herbs adds colour and a little extra freshness, while the smoked salmon brings a completely different character to the plate.
I particularly enjoy serving this when entertaining friends for brunch. It does not demand an elaborate table or a kitchen full of complicated dishes. Instead, it gives everyone something delicious to enjoy while leaving plenty of time for conversation, coffee and catching up.
Smoked salmon provides the perfect partner for scrambled eggs. Its rich, slightly salty flavour contrasts beautifully with the mild creaminess of the eggs. You can take a little salmon with each forkful, or enjoy it separately between mouthfuls. Either way, the combination works exceptionally well.
The herbs may seem like a small detail, but they make a noticeable difference. Fresh chives are a classic choice, bringing a gentle onion flavour without overpowering the eggs. Dill is another excellent option, particularly because its fresh, slightly aniseed character works so naturally with salmon. Parsley can also add a clean, fresh note.
For a brunch gathering, presentation matters too. A generous spoonful of fluffy scrambled eggs looks inviting on the plate, especially when finished with a scattering of bright green herbs. Arrange the smoked salmon alongside rather than hiding it beneath the eggs. This creates a simple contrast of colours and textures that looks far more impressive than the effort involved.
I like to serve the dish with a few uncomplicated extras. Toasted sourdough is excellent for adding some crunch, while a lightly dressed green salad can provide freshness if you are serving a larger brunch. A few lemon wedges are also useful, as the sharp citrus flavour cuts through the richness of the salmon.
There is also something wonderfully adaptable about this breakfast. You can serve it as a quiet weekend treat for two, or make it part of a larger brunch spread. Fresh fruit, pastries, yoghurt and good coffee can all sit comfortably alongside it. It also works particularly well when guests arrive at different times because the accompaniments can be prepared ahead.
Although the ingredients are straightforward, quality makes a difference. Fresh eggs give the dish a lovely colour and texture, while good smoked salmon provides a clean, delicate flavour. Fresh herbs then bring everything together. Consequently, there is little need for lots of additional seasoning or complicated flavours.
For me, that is what makes Simple Scrambled Eggs and Salmon such a dependable brunch favourite. It feels luxurious without being fussy, and it looks elegant without requiring elaborate presentation. Most importantly, it tastes wonderful.
Whether served on a lazy Sunday morning or as part of a sociable weekend brunch, this is a dish that always feels welcome at the table. It is comforting, fresh and satisfying in equal measure. Sometimes the simplest dishes really are the best, particularly when good ingredients and a little care are allowed to do the talking.
