Ultimate Chicken Pot Pie

There are some dishes that feel like a proper hug in food form, and this ultimate chicken pot pie sits very comfortably at the top of that list in my home. It is the sort of meal that makes the kitchen smell wonderful long before it reaches the table. The golden pastry, creamy filling and comforting combination of chicken, peas and carrots create something wonderfully traditional, yet there is plenty of room to give this classic a little personality.

For me, the ultimate chicken pot pie starts with the pastry. A good pie needs a pastry base and sides that can hold their own against the filling. Nobody wants a soggy bottom collapsing onto the plate. Instead, the pastry should cook until beautifully golden and firm, giving you that satisfying contrast between crisp pastry and the soft, creamy filling inside.

Then comes the filling, which is where this pie really earns its place as a family favourite. Tender pieces of perfectly cooked chicken sit among sweet peas and chunks of carrot. Everything comes together in a thick, creamy sauce that coats every ingredient without becoming watery or thin. The sauce should be rich enough to cling to the chicken and vegetables while still being wonderfully spoonable.

The beauty of chicken pot pie is that it does not need complicated ingredients to taste special. Traditional cooking often works because it concentrates on familiar flavours and gets the basics right. However, I do like adding a small twist now and again. A little extra seasoning, a handful of fresh herbs or a touch of something unexpected can bring another layer of flavour without taking the dish away from its traditional roots.

The pastry roof is particularly important. It should sit proudly over the filling, sealing everything inside as the pie cooks. As the heat works through the pastry, it turns golden and crisp while the creamy filling bubbles gently underneath. That moment when the pie emerges from the oven is always worth waiting for. The aroma alone tends to bring people into the kitchen asking when dinner is ready.

There is also something wonderfully satisfying about cutting into a whole chicken pot pie. The pastry gives way with a gentle crack, releasing a cloud of fragrant steam. Beneath it sits the creamy chicken and vegetable filling, still bubbling slightly and looking exactly as comforting as you hoped.

Individual chicken pot pies are another excellent way to serve this classic. They make the meal feel a little more special while giving everyone their own generous portion of pastry and filling. They are also ideal when entertaining because each person receives a little golden pie of their own. For a family meal, meanwhile, a larger pie makes a wonderfully impressive centrepiece.

I particularly like serving chicken pot pie with something simple alongside it. A crisp green salad can bring freshness to the richness, while lightly cooked vegetables make a more traditional combination. There is certainly no need for an elaborate selection of side dishes. The pie is already doing most of the hard work.

Leftovers, if there are any, are another reason to love this dish. The flavours often seem to settle and become even more comforting after a little time. A slice reheated for lunch the following day can feel like a reward for making the effort in the first place.

Ultimately, the best chicken pot pie is not about making something fashionable or complicated. It is about taking a much-loved traditional dish and giving it the care it deserves. Perfect pastry, tender chicken, colourful vegetables and a thick, creamy sauce are all it really needs. Add a little personal twist, serve it piping hot and you have the sort of meal that makes everyone pause after the first mouthful and think, now that’s proper comfort food.

Filling Ingredients:

Pastry Ingredients:

Instructions

Cook the chicken:

  • Heat the olive oil in a large frying pan over medium-high heat. Season the chicken pieces with salt and pepper and add the chicken pieces to the pan and cook for approximately 5–7 minutes, turning regularly, until lightly golden and cooked through.
2 tbsp olive oil, ½ tsp salt, ½ tsp freshly ground black pepper, 750 g chicken thighs
  • Remove the chicken from the pan and set aside. Avoid overcooking it at this stage because it will continue cooking slightly when the pie bakes.

Cook the vegetables:

  • Add the chopped onion, carrots and celery to the same pan. Cook for 5–6 minutes until the vegetables begin to soften.
1 medium onion, 2 medium carrots, 2 stalks celery
  • Add the garlic and cook for another minute, stirring continuously.
    2 cloves garlic

Make the creamy sauce:

  • Add the butter and allow it to melt. Sprinkle over the flour and stir well to form a smooth mixture.
    50 g butter, 50 g plain flour
  • Cook the flour for approximately 1–2 minutes, stirring constantly. Gradually add the chicken stock while stirring to prevent lumps from forming.
    500 ml chicken stock
  • Pour in the double cream and continue stirring until the sauce becomes thick and smooth.
    250 ml double cream
  • Add the Dijon mustard, thyme, parsley, salt and black pepper. Stir everything together.
1 tsp dried thyme, 1 tsp dried parsley, ½ tsp salt, 1 tsp Dijon mustard, ½ tsp freshly ground black pepper

Add the chicken and vegetables:

  • Return the cooked chicken to the pan. Add the frozen peas and chopped fresh parsley.
150 g frozen peas, 1 tbsp fresh parsley
  • Stir well and simmer gently for approximately 3–4 minutes. The finished mixture should be thick and creamy rather than runny.
  • Remove the pan from the heat and allow the filling to cool for around 10 minutes. This makes it much easier to assemble the pie without softening the pastry.

Prepare the pastry:

  • Preheat the oven to 200°C / 180°C fan / 400°F / Gas Mark 6.
  • Lightly grease the pie dish.
  • Roll out approximately two-thirds of the pastry and use it to line the base and sides of the dish. Press it gently into the corners without stretching the pastry.
    500 g shortcrust pastry
  • Trim away any excess around the edges.

Fill the pie:

  • Spoon the creamy chicken mixture into the pastry case. Spread it evenly, making sure the filling reaches into the corners.
  • Do not overfill the pie. Leave a small gap at the top so the filling has room to bubble while cooking.

Add the pastry roof:

  • Roll out the remaining pastry slightly larger than the top of the pie dish.
  • Place it over the filling and press the edges firmly against the pastry underneath to seal the pie.
  • Trim away excess pastry and crimp the edges with your fingers or the back of a fork.
  • Cut two or three small slits in the centre of the pastry. These allow steam to escape while the pie cooks.

Glaze and bake:

  • Mix the beaten egg with the tablespoon of milk. Brush the mixture generously over the pastry roof.
1 large egg, 1 tbsp milk
  • Place the pie on a baking tray to catch any sauce that might bubble over.
  • Bake for 40–45 minutes, or until the pastry is beautifully golden brown and crisp.
  • If the pastry starts browning too quickly, loosely cover the top with foil for the remaining cooking time.

Rest and serve:

  • Remove the pie from the oven and allow it to rest for **10–15 minutes** before serving.
  • This resting time allows the creamy sauce to thicken slightly and makes the pie much easier to serve without the filling running everywhere.

Individual Chicken Pot Pies:

  • For individual pies, divide the filling between six ovenproof pie dishes or ramekins. Cover each with a pastry lid, seal the edges and brush with the egg glaze.
  • Bake at 200°C / 180°C fan / 400°F / Gas Mark 6 for approximately 25–30 minutes, until the pastry is golden and crisp.

Notes

Serving Suggestions:
Serve the chicken pot pie with:
Creamy mashed potatoes
Steamed green beans
Roasted vegetables
Buttered peas
A crisp green salad
Tenderstem broccoli
Cook’s tip: For an extra depth of flavour, add a splash of dry white wine to the vegetables just before making the sauce, allowing it to cook away before adding the flour and stock.

This is exactly what I want from a traditional chicken pie. Nothing complicated, just lovely chicken, vegetables, creamy sauce and plenty of golden pastry.

This reminded me of the chicken pies my grandmother used to make. I added a little extra thyme and thought it worked beautifully with the creamy sauce.

I thought the carrots and peas gave the pie just the right amount of sweetness. The creamy sauce brought everything together beautifully.

I made individual pies rather than one large pie and they looked fantastic. Everyone loved having their own little golden pie, and the filling was full of flavour.

I used chicken thighs instead of breast and thought they worked brilliantly. The meat stayed wonderfully juicy and added plenty of flavour to the filling.

The Dijon mustard was a surprisingly nice addition. You couldn’t really pick it out, but it gave the creamy sauce a little extra depth.

The sauce was the star for me. It was thick, creamy and packed with flavour, and there was just enough of it to coat the chicken and vegetables without making the pie soggy.

I was particularly pleased that the filling wasn’t watery. It stayed thick and creamy even after cutting into the pie, which made serving it much easier.

This recipe has definitely gone into our regular dinner rotation. It is comforting, filling and feels like something special without being difficult.

I slightly overfilled my pie, which caused a little sauce to bubble over, but honestly that didn’t matter. The filling was delicious and the pastry still cooked perfectly.

I loved the combination of chicken, carrots and peas. Everything was cooked perfectly, and the pastry gave the dish a lovely crisp contrast to the soft filling.

A lovely old-fashioned recipe with just enough of a twist to make it interesting. The mustard and herbs added flavour without taking away from the traditional character.

This was absolutely delicious and tasted like proper homemade comfort food. The creamy sauce was thick without being too heavy, and the pastry came out beautifully golden.

The pastry was excellent and held together well when I served the pie. The filling was thick enough to stay inside rather than spreading all over the plate.

A proper comfort-food winner. The pastry roof was beautifully crisp, the sauce was rich and creamy, and there was plenty of tender chicken in every serving.

I made one large pie for Sunday dinner and served it with mashed potatoes and green beans. It was incredibly filling and everyone went back for more.
