There are some pasta dishes that simply feel like comfort food from the moment they reach the table. Shrimp Rigatoni is one of those dishes. It combines large, succulent shrimp with al dente rigatoni, a silky cream sauce, Parmesan and fresh parsley. The result is rich without being overwhelming, satisfying without feeling too heavy, and wonderfully easy to enjoy.
I have always loved the way Italian cooking can make a handful of familiar ingredients feel special. It does not always need complicated techniques or a long list of ingredients. Instead, good pasta, quality seafood and a well-balanced sauce can create something that feels worthy of a relaxed dinner with friends.
The rigatoni is particularly important here. Its large, ridged tubes are perfect for a creamy sauce because the ridges catch the sauce while the hollow centre holds even more. Every forkful therefore brings together pasta, sauce and a little Parmesan. Add a plump shrimp to the bite and you have a combination that is difficult to resist.

There is something particularly pleasing about watching a pale, glossy sauce cling to the rigatoni as it is lifted from the bowl. Parmesan adds a savoury depth, while its slight sharpness helps balance the richness of the cream.
The parsley might look like a finishing touch, but it plays an important part. Its fresh flavour cuts through the creamy sauce and gives the dish a lighter character. I also love the little flashes of green against the pasta and shrimp. It makes the whole plate look fresher and more inviting.
This is the sort of dish I would happily serve when entertaining. It has enough elegance to make guests feel that you have made an effort, yet it still has the warmth and generosity that I associate with good home cooking. Place a large serving bowl in the centre of the table and let everyone help themselves. It instantly creates a more relaxed atmosphere.
A simple green salad makes an excellent companion. Its crisp leaves and fresh dressing provide a welcome contrast to the creamy pasta. Some warm crusty bread is also hard to resist, particularly when there is a little sauce left in the bowl. That last mouthful of sauce is far too good to waste.
I would also keep the rest of the meal fairly uncomplicated. Shrimp Rigatoni already has plenty of character, so there is no need to crowd the table with lots of competing flavours. A few simple vegetables or a fresh tomato salad would work beautifully.
What I particularly enjoy about this dish is its balance. The pasta provides substance, the shrimp bring sweetness and texture, while the cream and Parmesan create richness. Meanwhile, parsley keeps everything tasting fresh.

Shrimp Rigatoni
Equipment
- large frying pan or skillet
- wooden spoon or spatula
Ingredients
- 400 g rigatoni pasta
- 500 g shrimp large raw prawns peeled and deveined
- 2 tbsp olive oil
- 30 g butter
- 3 cloves garlic finely minced
- 250 ml double cream
- 75 g Parmesan cheese finely grated
- 100 ml pasta water reserved
- 2 tbsp fresh parsley finely chopped
- ½ tsp salt
- ½ tsp freshly ground black pepper
- ¼ tsp chilli flakes optional
- 1 tbsp lemon juice
Instructions
- Bring a large saucepan of salted water to a rolling boil. Add the rigatoni and cook according to the packet instructions until al dente. Before draining, reserve approximately 100ml of the pasta water.400 g rigatoni pasta
- While the pasta cooks, pat the shrimp dry with kitchen paper. Season lightly with salt and black pepper.500 g shrimp, ½ tsp salt, ½ tsp freshly ground black pepper
- Heat the olive oil in a large frying pan over medium-high heat. Add the shrimp and cook for approximately 1½–2 minutes on each side. They should turn pink and opaque but remain tender. Remove them from the pan and set aside.2 tbsp olive oil
- Reduce the heat to medium and add the butter to the same pan. Once melted, add the minced garlic and cook for about 30 seconds. Take care not to let the garlic brown.30 g butter, 3 cloves garlic
- Pour the double cream into the pan and stir gently. Allow it to simmer for 2–3 minutes so it begins to thicken slightly.250 ml double cream
- Stir the grated Parmesan into the cream sauce. Continue stirring until the cheese melts and the sauce becomes smooth and glossy.75 g Parmesan cheese
- Add a little of the reserved pasta water and stir. Continue adding it gradually until the sauce reaches a silky consistency that will coat the rigatoni.100 ml pasta water
- Add the drained rigatoni to the sauce. Toss gently with tongs until every piece is coated. If using chilli flakes, add them at this stage.¼ tsp chilli flakes
- Add the cooked shrimp back to the pan and gently toss everything together. Warm for another minute, ensuring the shrimp do not become overcooked.
- Stir through the lemon juice and most of the chopped parsley. Taste and adjust the seasoning if necessary.1 tbsp lemon juice, 2 tbsp fresh parsley
- Divide the Shrimp Rigatoni between four warmed bowls. Finish with another generous grating of Parmesan and a scattering of fresh parsley. Serve immediately while the sauce is creamy and the shrimp are tender.

I absolutely loved this. The large shrimp were juicy, and the pasta held onto the creamy sauce perfectly. The fresh parsley and little squeeze of lemon stopped the dish from feeling too rich.
