There is something wonderfully inviting about a plate of prawns arriving at the table with a bowl of glossy chilli sauce alongside it. The combination of sweet seafood, crisp batter and a lively chilli kick makes Pan Fried Prawns and Chilli Sauce the sort of dish that disappears surprisingly quickly. Whenever I serve these while entertaining, I know I should make more than I think I need. Someone always reaches for “just one more”.
What makes this dish particularly enjoyable is the contrast in textures. The prawns remain tender and juicy inside, while a light coating gives them a delicate crunch on the outside. They are not heavily battered, which means the prawns still take centre stage. Instead, the coating adds just enough crispness to make every bite more interesting.
I particularly enjoy dishes like this when friends come over because they feel special without being fussy. You can arrange the prawns on a large serving plate, place the chilli sauce in the middle and let everyone help themselves. It creates a relaxed atmosphere around the table. Food like this encourages conversation, sharing and that inevitable debate over who gets the last prawn.
The chilli sauce brings another dimension altogether. Depending on the sauce you choose, you can have sweetness, heat, garlic, acidity or even a little smokiness. I like a sauce with enough chilli to wake up the taste buds without completely overpowering the prawns. After all, the seafood should still be noticeable beneath the heat.
Prawns are naturally suited to bold flavours. Their slightly sweet, delicate taste works particularly well with chilli because the heat creates a lovely contrast. The crisp coating then gives the sauce something to cling to. Take a bite while the prawns are still warm and you get crunch first, followed by tender seafood and finally that familiar chilli warmth.
This is also one of those dishes that works brilliantly as part of a larger spread. For a casual gathering, I might serve the prawns alongside other small dishes, allowing everyone to pick and choose. They are equally comfortable at a barbecue-style gathering, a buffet or a relaxed family meal. Add some fresh salad, crunchy vegetables or steamed rice and the prawns can easily become part of something more substantial.
There is a little bit of theatre involved too. Bringing a plate of freshly cooked, golden prawns to the table tends to attract attention. The aroma alone is enough to make people wonder when they can start eating. I prefer serving them while the coating still has its crisp texture, although they rarely have much opportunity to cool down when guests are hungry.
When cooking for friends, I also appreciate recipes that do not require endless attention once everything is prepared. Prawns cook quickly, so there is little reason to spend half the evening standing over the hob. That leaves more time for pouring drinks, catching up with friends and enjoying the occasion.
The light batter is important here. A heavy coating would turn the dish into something quite different and could hide the delicate flavour of the prawns. A thinner, lighter coating gives that satisfying crunch without making the prawns feel weighed down. It also provides just the right surface for the chilli sauce.
For me, this is exactly what entertaining food should be. It looks tempting, tastes exciting and encourages people to gather around the table. It is familiar enough to appeal to most guests, yet the combination of crisp prawns and chilli sauce gives it plenty of personality.
Whether served as a starter, a party nibble or part of a relaxed meal with family and friends, Pan Fried Prawns and Chilli Sauce is a dish with plenty of charm. The crisp coating, succulent prawns and lively sauce create a combination that is difficult to resist. Just remember to keep an eye on the serving plate. If your guests enjoy prawns as much as mine do, the last one will not be there for long!

Pan Fried Prawns and Chilli Sauce
Equipment
- Tongs or slotted spoon
Ingredients
Prawns Ingredients:
- 500 g raw prawns large peeled and deveined
- 100 g plain flour
- 50 g cornflour
- 1 large egg
- 150 ml water cold sparkling
- 1 tsp garlic powder
- ½ tsp ground white pepper
- ½ tsp paprika
- ½ tsp salt
- Vegetable oil for pan frying
- 2 large spring onions finely sliced
- 1 tbsp sesame seeds
Chilli Sauce Ingredients:
- 4 tbsp sweet chilli sauce
- 1 tbsp rice vinegar
- 1 tbsp soy sauce
- 1 clove garlic finely grated
- ½ tsp ginger freshly grated
- 1 tsp lime juice
- ½ tsp sesame oil
- 1 small red chilli finely sliced, optional
Instructions
Prepare the prawns:
- Pat the prawns dry with kitchen paper. Removing excess moisture helps the batter cling properly and gives a crispier finish.
Make the chilli sauce:
- Place the sweet chilli sauce, rice vinegar, soy sauce, garlic, ginger, lime juice and sesame oil into a small bowl. Stir well until combined. Add the sliced fresh chilli if you prefer extra heat. Set aside.1 tbsp sesame seeds, 4 tbsp sweet chilli sauce, 1 tbsp rice vinegar, 1 tbsp soy sauce, 1 clove garlic, ½ tsp ginger, 1 tsp lime juice, 1 small red chilli
Prepare the batter:
- Add the plain flour, cornflour, garlic powder, white pepper, paprika and salt to a large bowl. Mix thoroughly.100 g plain flour, 50 g cornflour, 1 tsp garlic powder, ½ tsp ground white pepper, ½ tsp paprika, ½ tsp salt
- Crack the egg into the dry ingredients and gradually whisk in the cold sparkling water. Stop mixing as soon as you have a smooth, fairly light batter. Do not overwork it.1 large egg, 150 ml water
Heat the oil:
- Add enough vegetable oil to generously cover the base of a large frying pan. Heat over medium-high heat until hot. The oil should sizzle when a small drop of batter is added.Vegetable oil
Coat the prawns:
- Dip each prawn into the batter, allowing any excess to drip back into the bowl. Make sure each prawn receives a light, even coating.500 g raw prawns
Pan fry:
- Carefully place the battered prawns into the hot oil, working in batches so you do not overcrowd the pan. Fry for approximately 2–3 minutes on each side, turning once, until golden and crisp and the prawns are cooked through.
Drain:
- Remove the prawns with tongs or a slotted spoon and place them on kitchen paper to absorb excess oil.
Garnish:
- Transfer the crispy prawns to a serving plate. Scatter over the sliced spring onions and sesame seeds.2 large spring onions, ½ tsp sesame oil
Serve:
- Serve immediately with the chilli sauce alongside for dipping, or drizzle a little sauce over the prawns just before serving.

To me this is the perfect finger food. I have made these twice this week!!
These were absolutely delicious and ideal for sharing. I liked being able to control the heat by adding more or less fresh chilli to the sauce.
I found the batter needed a little more seasoning, so I added extra paprika and white pepper. Once adjusted, the prawns were excellent.
Really enjoyable and full of flavour. I particularly liked the ginger and garlic in the chilli sauce, which made it taste much fresher than a bought sauce.
I made these for a family dinner and they disappeared almost immediately. The light batter worked really well and did not overpower the prawns.
I thought the chilli sauce was a little too sweet, so I added some extra lime juice and rice vinegar. That adjustment suited my taste much better.
The prawns came out beautifully crisp and golden. The chilli sauce was the perfect balance of sweet and spicy, and everyone wanted seconds.
I enjoyed the prawns, although I found the batter slightly too thick. I added a little more sparkling water and the second batch turned out much better.
I had trouble getting the batter as light as I wanted, but chilling it for a few minutes seemed to help. The second attempt was much better.
These made a fantastic starter for a dinner party. They looked impressive on the serving plate and tasted even better than they looked.
Absolutely delicious. The combination of crispy prawns and sweet chilli sauce is hard to beat. A great recipe for entertaining.
I enjoyed this recipe, although I would personally use less chilli next time. The sauce was quite hot for some of my guests, but everyone still liked the prawns themselves.
I served these alongside fried rice and stir-fried vegetables and turned them into a complete meal. Everyone enjoyed them.
These were fantastic as a starter. The prawns cooked quickly and the batter had just the right amount of seasoning.
Excellent recipe. The sparkling water made a noticeable difference to the batter, which stayed light and crispy. I will definitely make these again.
Very tasty and easy to follow. I would recommend keeping the prawns in small batches when frying because mine lost some of their crispness when I overcrowded the pan.
Very good recipe, although I reduced the amount of soy sauce in the chilli dip as I found it a little salty for my taste. Otherwise, everything worked perfectly.
The batter did not stick to my prawns as well as I expected. I dried them more thoroughly and dipped them again, which seemed to solve the problem. The finished prawns were delicious.
The prawns were juicy and tender inside with a lovely crunchy coating. I served them with lime wedges and they were a big hit.
Fantastic prawns. The coating was light and crunchy rather than heavy, and the sesame seeds added a nice finishing touch.
A simple but impressive dish. The prawns were cooked perfectly and the crisp coating gave them a lovely texture.
Really good starter and one I would happily make again. They were crunchy, succulent and particularly good with a squeeze of fresh lime.
This is a lovely recipe when you want something that feels special without spending hours in the kitchen. The crispy coating was excellent.
I used slightly larger prawns than suggested and needed an extra minute or two of cooking time. Apart from that, the recipe worked beautifully.
These were a great success at our family gathering. The sauce had enough heat to make things interesting without being overpowering.
I made these for a buffet and should have doubled the quantities. They were one of the first dishes to disappear from the table.
Really tasty and surprisingly quick to make. I loved the crunch from the batter and the fresh chilli in the sauce gave it a lovely kick.
Lovely crispy prawns with plenty of flavour. The fresh ginger in the sauce really stood out and complemented the seafood perfectly.
