Ingredients
For the dressing:

Extra Virgin olive oil

tomatoes
peeled and seeded
2
cloves
garlic
1/4
cup
red wine vinegar

tsp
paprika

tsp
ground cumin
salt
to taste
ground pepper
to taste
For the salad:
2
heads
lettuce
torn up
3
large
scallions
thinly sliced
2
large
eggs
hard boiled & sliced
1/2
cup
sweetcorn
1/2
cup
mixed peppers
chopped

Green pitted olives
to taste
cooked ham
chopped
Instructions
Combine the ingredients for the dressing in an electric blender or food processor and process until smooth.
1/2 cup Extra Virgin olive oil,
3 large tomatoes,
2 cloves garlic,
1/4 cup red wine vinegar,
2 tsp paprika,
1/2 tsp ground cumin,
salt,
ground pepper
Toss the lettuce and scallions with the dressing and garnish with the remaining ingredients.
