Spanish Andalusian Salad – Ensalada Andaluza comes from southern Spain and is all about the balance that a European salad has. The ingredients are common in most larders and easy to make. There are only two instructions that are so easy even I can do it. The result is a salad full of flavour, colour and the joys of Southern Spain. The Olive Oil and olives remind me of that part of the world. I normally add small chunks of cooked ham or shrimp if serving this as a main dish or nothing else added if a side-dish. Even the hungriest of guests will love this salad.

Ingredients
For the dressing:
- 1/2 cup Extra Virgin olive oil 125 ml
- 3 large ripe tomatoes peeled and seeded
- 2 cloves garlic
- 1/4 cup red wine vinegar 125 ml
- 2 tsp paprika 10 ml
- 1/2 tsp ground cumin 2 ml
- salt to taste
- ground pepper to taste
For the salad:
- 2 heads lettuce torn up
- 3 large scallions thinly sliced
- 2 large eggs hard boiled & sliced
- 1/2 cup sweetcorn
- 1/2 cup mixed peppers chopped
- 10 large Green pitted olives to taste
- cooked ham chopped
Instructions
- Combine the ingredients for the dressing in an electric blender or food processor and process until smooth.
- Toss the lettuce and scallions with the dressing and garnish with the remaining ingredients.
