Spanish Andalusian Salad – Ensalada Andaluza comes from southern Spain and is all about the balance that a European salad has. The ingredients are common in most larders and easy to make. The Olive Oil and olives remind me of that part of the world. I normally add small chunks of cooked ham or shrimp if serving this as a main dish or nothing else added if a side-dish. Even the hungriest of guests will love this salad.
