Strawberry Tiramisu

Tiramisu is a classic Italian dessert made with layers of coffee-soaked sponge fingers and a rich mascarpone cream. Its combination of coffee, cream, and cocoa provides a balance of bitter and sweet flavours. The dessert is chilled, making it a cool, creamy treat perfect for any occasion.

Ingredients

300 ml double cream
250 g mascarpone cheese
75 g caster sugar
2 tsp vanilla extract
300 ml espresso coffee strong cooled
100 ml marsala wine optional
175 g sponge fingers
2 tbsp cocoa powder
Dark chocolate shavings
24 large strawberries halved

Instructions

In a large bowl, whisk the double cream, mascarpone, sugar, and vanilla extract until smooth and slightly thickened. Set aside.
300 ml double cream, 250 g mascarpone cheese, 75 g caster sugar, 2 tsp vanilla extract
In a shallow dish, mix the cooled espresso with the marsala wine (if using).

Quickly dip each sponge finger into the coffee mixture, ensuring they absorb some liquid but don’t become too soggy.
175 g sponge fingers
Layer the soaked sponge fingers in the bottom of a medium-sized dish (roughly 20cm square or similar).
Spread half of the mascarpone mixture evenly over the sponge fingers.
Add another layer of dipped sponge fingers on top of the mascarpone mixture.
Spread the remaining mascarpone mixture over the second layer of sponge fingers, smoothing it out.
Cover the dish with cling film and chill in the fridge for at least 4 hours or overnight.
Just before serving, dust the top with cocoa powder and, if desired, sprinkle some dark chocolate shavings for extra richness.

Add strawberries to the top of the tiramisu.
24 large strawberries
Slice and serve chilled.
