Ingredients

turkey crown
2
tbsp
olive oil
2
cloves
garlic
minced
1
tbsp
rosemary
chopped
1
tbsp
thyme
chopped
1
tsp
lemon zest
grated
1
tbsp
sea salt
Instructions
Preheat the oven to 170 C / Gas 3.
Mix the olive oil, garlic, rosemary, thyme, lemon zest, sea salt and black pepper.

1 tbsp sea salt
Place the turkey crown in a roasting tin (on a rack if desired) and rub the herb mixture all over the crown, getting under the skin as well.
4 kg turkey crown
Roast the crown for 90 minutes to 2 hours, or until the juices run clear.
Tent with aluminium foil and let rest for up to 2 hours before carving.
It will stay warm for a long time so don't panic.
