Tomato and Basil Pasta

Ingredients

400 g pasta spaghetti or penne work well
2 tbsp olive oil
1 medium onion finely chopped
2 cloves garlic finely chopped
800 g chopped tomatoes tinned or fresh
1 tsp sugar
Salt to taste
Black pepper to taste
1/4 bunch basil leaves fresh
Parmesan grated to serve

Instructions

Bring a large saucepan of salted water to the boil.
Add the pasta and cook until just tender.

Drain well and set aside, keeping a small cup of the cooking water.
Heat the olive oil in a wide pan over medium heat.

Add the chopped onion and cook gently until soft and translucent.

Stir regularly so the onion softens without colouring.
Add the garlic and cook for one minute.

Stir constantly to prevent it from burning.
The aroma should smell fragrant rather than sharp.
Pour in the chopped tomatoes and stir well.

Add the sugar, salt, and black pepper.

Let the sauce simmer gently for ten minutes until slightly thickened.
Tear most of the basil leaves and stir them into the sauce.

Add the cooked pasta and toss until well coated.
Loosen the sauce with a splash of reserved pasta water if needed.
Taste and adjust the seasoning if required.
Serve immediately with the remaining basil scattered on top.
