In a mixing bowl, combine mascarpone cheese, Greek yogurt, honey and vanilla extract. Whisk until smooth and creamy.
1 cup mascarpone cheese, 1/2 cup Greek yogurt, 2 tbsp runny honey, 1 tsp vanilla extract
Gently fold in half of the fresh blueberries into the mascarpone mixture, reserving the other half for topping.

If desired, add powdered sugar to the mascarpone mixture for extra sweetness, adjusting to taste.
Divide the mascarpone-blueberry mixture evenly among serving glasses or bowls.
