Arugula leaves are usually treated as a salad green. The spicy, peppery flavor of arugula is also a valued addition to soups and vegetable dishes. Also known as rocket, it is popular in French (where it is known as roquette) and Italian (rucola) cooking. It has become near universally available in the United States in recent years, and is easily cultivated from seed.
