Cheese and Bacon Muffins
These tantalising cheese and bacon muffins, will be loved by the whole family. They are delicious made with the addition of some Welsh quality cheese and bacon.

smoked back bacon

free range, lightly beaten

butter

low fat yoghurt
Instructions
Sift the flour, salt and baking powder into a mixing bowl
250 g plain flour,
1 tsp baking powder,
1/2 tsp sea salt
Add the rest of the ingredients and fold everything together with the lightest of touch, until just blended
175 g smoked back bacon,
50 g welsh cheese,
1 tsp mustard,
1 pinch cayenne pepper,
1 tsp thyme,
2 large eggs,
65 g butter,
125 ml low fat yoghurt
Do not over mix
Spoon the mixture into the prepared muffin tins
Bake in a preheated over, 180C gas mark 4 for 20 to 30 minutes until golden and firm
Remove and allow to cool in the tin for 10 minutes
Notes
I often add a few cherry tomatoes for added colour and texture. Make sure you don't mix them in too hard as they will turn to a mulch otherwise.
