Season the steak with salt and a little black pepper, then divide the mixture into four equal portions and shape into a round Pattie about an inch thick.
800 g beef, 1 pinch sea salt, 1 pinch Black pepper
Heat a frying pan but don't add any oil as the fat will render out as the burger cooks.
Cook for 4 minutes on one side or until the burgers are well seared and have a good crust.
Flip them and cook for another 4 minutes. Add a slice of cheddar to melt whilst cooking
4 slices cheddar
I always add a bit of lettuce and a sliced gherkin.

By rule of thumb I cook my burgers on the following basis:3 minutes per side for rare meat,4 minutes per side for medium-rare,5 minutes per side for mediumand up to 6 minutes per side for well done.
