  • Season the steak with salt and a little black pepper, then divide the mixture into four equal portions and shape into a round Pattie about an inch thick.
  • Heat a frying pan but don't add any oil as the fat will render out as the burger cooks.
  • Cook for 4 minutes on one side or until the burgers are well seared and have a good crust.
  • Flip them and cook for another 4 minutes. Add a slice of cheddar to melt whilst cooking
  • I always add a bit of lettuce and a sliced gherkin. Serve with the burger sauce. (see our recipe for the perfect burger sauce - L's Burger Sauce)


By rule of thumb I cook my burgers on the following basis:
3 minutes per side for rare meat,
4 minutes per side for medium-rare,
5 minutes per side for medium
and up to 6 minutes per side for well done.
