In a mixing bowl, add the mayonnaise, mascarpone and the mustard and mix together well. I like to add the mustard into the sauce for that warmth and kick but adjust amount of mustard to your liking.
230 g mayonnaise, 1 tbsp soft cheese, 2 tsp English mustard
Place the 4 large tortillas on a clean work surface and evenly spread the sauce across the middle of each tortilla.

Add a ¼ of the sliced cheese, chopped onion, lettuce and tomato evenly to each tortilla.
1 medium red onion, 75 g lettuce, 8 slices cheese, 8 large plum tomatoes
Finally add the leftover turkey and ham with a sprinkle of salt and pepper.
500 g turkey, 500 g ham, salt, Pepper
Roll the tortilla into a large cigar shape and cut in half, then cut the two pieces in half to end up with 4 small tortilla rolls.
Serve immediately or cover with clingfilm/shrink wrap and keep in a cool place until needed.
