Add the eggs, sliced onions, mayonnaise, mushroom soup, salt and pepper to a large mixing bowl and thoroughly stir.
1 medium onion, 1 large egg, 8 oz mayonnaise, 4 oz cream of mushroom soup, ½ tsp salt, 1/2 tsp ground pepper
Add ½ of each of the courgette/zucchini, sliced red peppers, broccoli and bean sprouts spreading them evenly around a 12 x 10 (9x13) glass oven proof dish.
8 oz courgette, 8 oz broccoli, 1 large red bell pepper
Spread ½ of the soup/mayo mixture over the layer.
Add the remaining ½ of the vegetables and top of with the remaining soup/mayo mixture.
Sprinkle the sliced plum tomatoes and then the two grated cheese over the top evenly.
12 large plum tomatoes, 4 oz cheddar, 4 oz mozzarella
Place in the middle of the oven. After an hour, check to see if the cheese has turned golden and the vegetables are cooked fully.
Serve either on it own or with a light salad for a healthy filling dish.
