For the Chicken

peel/finely chop

Instructions
Add the water, sugar, both soy sauces and the oyster to a mixing bowl and stir well.
4 tbsp water,
2 tsp dark soy sauce,
2 tsp light soy sauce,
4 tsp oyster sauce,
2 tsp sugar
Place the wok over a high heat and add the oil.
Add the sliced chilli, garlic and the red bell pepper and stir fry for 15 seconds.
4 cloves garlic,
1 large red chilli,
1 large red bell pepper
Add the scallions/spring onions together with the chicken and continue to str fry to about 2 minutes.
3 large scallions,
500 g chicken breasts
Pour the sauce ingredients from the mixing bowl into the wok and fry until the liquid reduces into a lovely thick shiny sauce.
Serve with steamed or jasmine rice for an amazing meal.
