Add a large saucepan of water over a high heat and add the potatoes.

Heat until it simmers and reduce the heat to keep it simmering away. Cook until the potatoes are tender. Normally about 10 – 15 minutes depending on size.
In a smaller saucepan, add the butter, sour cream, mushroom soup, scallions, slat and pepper and stir.
½ cjup sour cream, 3 large scallions, 1.2 oz unsalted butter, 4.5 oz cream of mushroom soup, salt, black pepper
Add half of the grated cheese.

Drain the potatoes and carefully transfer to the butter mixture and toss/stir until everything is combined and coated.
Transfer to your baking dish and top with the other half of the grated cheese.

Place the baking dish on a baking tray( to catch any spills) and place in the preheated oven on the middle shelf.
Bake for about 30 minutes or until the cheese on top is golden brown and bubbling away.
