Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
In a small bowl, combine the flour, granulated sugar, brown sugar, and cinnamon for the streusel topping.
1/2 cup all-purpose flour,
1/4 cup granulated sugar,
1/4 cup brown sugar,
1/2 tsp ground cinnamon,
1/4 cup unsalted butter
Using a pastry cutter or your fingers, cut in the cold butter until the mixture resembles coarse crumbs. Set aside.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
2 cups all-purpose flour,
1 tsp baking powder,
1/2 tsp baking soda,
1/2 tsp salt
In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy.
1/2 cup unsalted butter,
3/4 cup granulated sugar
Beat in the eggs, one at a time, followed by the vanilla extract.
2 large eggs,
1 tsp vanilla extract
Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, until fully combined.
1/2 cup buttermilk
Spread the cake batter evenly into the prepared cake pan.
Arrange the thinly sliced plums on top of the batter in a single layer.
4 large plums
Sprinkle the streusel topping evenly over the plums.
Place the cake pan in the preheated oven and bake for 35-40 minutes, or until a toothpick inserted into the centre comes out clean.
Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Slice and serve the plum streusel cake on its own or with a dollop of whipped cream or vanilla ice cream.
