Ingredients

heavy cream
2

Leeks
thinly sliced
2
tbsp
thyme
Ccopped
2

sweet potatoes
thinly sliced

cups
cheddar cheese
grated
1

apple
cored, sliced
1
grates
nutmeg
1
pinch
salt
to taste
1
pinch
ground pepper
to taste
Instructions
Combine the cream, leeks, thyme, salt, pepper, and nutmeg in a saucepan and bring to a boil over moderate heat, stirring occasionally.
1 1/4 cups heavy cream,
2 large Leeks,
2 tbsp thyme,
1 pinch salt,
1 pinch ground pepper,
1 grates nutmeg
Add the sweet potatoes and simmer covered 10 minutes.
2 large sweet potatoes
Layer half the sweet potato mixture in a buttered baking dish.
Top with the sliced apple.
1 large apple
Repeat with sweet potato mixture and cheese.
2 cups cheddar cheese
Bake uncovered in a preheated 375F (190C) oven for about 45 minutes, until bubbling and golden brown.
