Bacon Baguette Canapes

Bacon Baguette Canapes are simple, warm, and packed with flavour. Crisp baguette slices hold a creamy mayonnaise topping with smoky bacon and melted cheese. Fresh herbs finish the dish beautifully and add a burst of colour to every bite.

Ingredients

1 small baguette
8 rashers smoked streaky bacon
120 g cheddar cheese mature grated or Mozzarella
4 tbsp mayonnaise
1 tsp Dijon mustard
1 clove garlic crushed
1 tbsp fresh chives chopped
1 tbsp parsley chopped
Black pepper
Olive oil

Instructions

Preheat the oven to 200°C fan or 220°C conventional.
Line a baking tray with baking parchment.
Slice the baguette into pieces around 2cm thick. Arrange the slices across the tray in a single layer.

Lightly spray the baguette slices with olive oil. Warm them in the oven for 5 minutes until lightly crisp around the edges.

Meanwhile, place the bacon into a frying pan over medium heat. Cook until lightly crisp and golden. Remove the bacon and place it onto kitchen paper.

Chop the cooked bacon into small circular pieces or just pieces.
In a small bowl, mix the mayonnaise, Dijon mustard, crushed garlic and a little black pepper.
4 tbsp mayonnaise, 1 tsp Dijon mustard, 1 clove garlic, Black pepper
Spread a small spoonful of the flavoured mayonnaise onto each warmed baguette slice.
Scatter the chopped bacon evenly over the top.
Sprinkle the grated cheese over every canape.
120 g cheddar cheese
Return the tray to the oven for 6 to 8 minutes until the cheese melts and bubbles gently.
Remove the tray from the oven carefully. Scatter over the chopped chives and parsley before serving.
