  • Preheat the oven to 200°C fan or 220°C conventional.
  • Line a baking tray with baking parchment.
  • Slice the baguette into pieces around 2cm thick. Arrange the slices across the tray in a single layer.

  • Lightly spray the baguette slices with olive oil. Warm them in the oven for 5 minutes until lightly crisp around the edges.

  • Meanwhile, place the bacon into a frying pan over medium heat. Cook until lightly crisp and golden. Remove the bacon and place it onto kitchen paper.
    8 rashers smoked streaky bacon
  • Chop the cooked bacon into small circular pieces or just pieces.
  • In a small bowl, mix the mayonnaise, Dijon mustard, crushed garlic and a little black pepper.
    4 tbsp mayonnaise, 1 tsp Dijon mustard, 1 clove garlic, Black pepper
  • Spread a small spoonful of the flavoured mayonnaise onto each warmed baguette slice.
  • Scatter the chopped bacon evenly over the top.
  • Sprinkle the grated cheese over every canape.
    120 g cheddar cheese
  • Return the tray to the oven for 6 to 8 minutes until the cheese melts and bubbles gently.
  • Remove the tray from the oven carefully. Scatter over the chopped chives and parsley before serving.
    1 tbsp fresh chives, 1 tbsp parsley

These canapes taste wonderful served warm with a crisp green salad, tomato soup, or a selection of party snacks. They also pair nicely with pickles, olives, and roasted peppers on a sharing platter.
