Heat the olive oil in a large pan over medium heat. Add the chopped onion and garlic, sauté for 2 minutes. Add the ground beef and cook until browned.

Stir in the bell pepper, rice, beans and taco seasoning. Cook for another 5 minutes. Season with salt and pepper. Remove from heat.

Spoon the beef mixture into the centre of each tortilla. Fold the sides, then roll them up. Place them seam-side down in an ovenproof dish.

Preheat the oven to 180°C (350°F). In a bowl, mix the tomato sauce with cumin, paprika, salt, and pepper. Pour the sauce over the burritos and sprinkle the grated cheese on top.

Place the burritos in the oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.
In a bowl, combine the lettuce, tomato, and onion. Drizzle with olive oil and lime juice. Toss and season with salt and pepper.
