8large eggsfree range
1/4cupmilk
1/2cupbell pepperdiced
1/2cupmushroomsdiced
1/2cuphamdiced
1/2cupcheddar cheeseshredded

Instructions
Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray or line with silicone or parchment paper liners.

In a large mixing bowl, whisk together the eggs and milk until well combined. Season with salt and pepper to taste.

Stir in the diced bell peppers, mushrooms, ham and shredded cheddar cheese until evenly distributed throughout the egg mixture.

Pour the egg mixture into the prepared muffin tin, filling each cup about 2/3 full.
Bake in the preheated oven for 20-25 minutes, or until the egg muffins are set and lightly golden on top.
Remove the muffin tin from the oven and let the egg muffins cool for a few minutes before serving.
Once cooled slightly, carefully remove the egg muffins from the muffin tin and serve warm.
