Notes
Here are some tips to ensure your Marinated Beef with Fresh Guacamole turns out superb every time:
For the Carne Asada/Marinated Beef:
Marinate for Maximum Flavour – At least 2 hours is essential, but overnight marination will make the beef even more flavourful and tender. The citrus juices help break down the meat fibres.
Room Temperature Before Cooking – Take the marinated steak out of the fridge 30 minutes before cooking. This ensures even cooking and better caramelisation.
High Heat for a Perfect Sear – Whether grilling or pan-searing, make sure your cooking surface is very hot before adding the steak. This creates a delicious char on the outside while keeping the inside juicy.
Don’t Overcook – Flank and skirt steak are best cooked to medium-rare or medium (about 4-6 minutes per side). Overcooking can make them tough.
Rest Before Slicing – Let the steak rest for 5 minutes before cutting. This allows the juices to redistribute, keeping it tender and moist.
Slice Against the Grain – Cutting against the grain (perpendicular to the muscle fibres) ensures each bite is tender and easy to chew.
For the Guacamole:
Use Ripe Avocados – They should yield slightly when pressed but not be mushy. Overripe avocados can taste bitter, while underripe ones are too firm and bland.
Mash to Your Liking – If you like a chunkier guacamole, mash it lightly with a fork. For a smoother texture, use a spoon and mix well.
Balance the Flavours – Lime juice adds freshness, onions add a little bite, and tomatoes add sweetness. Adjust the salt and lime juice to taste.
Keep It Fresh – Guacamole can brown quickly. To keep it green, store it with a layer of plastic wrap pressed directly onto the surface to prevent oxidation.
Bonus Tips:
For an extra smoky flavour, grill the steak over charcoal or use smoked paprika in the marinade.
For a spicy kick, add finely chopped jalapeños to the guacamole or a pinch of cayenne to the marinade.
For ultimate tacos, warm the tortillas on the grill or in a dry pan for a few seconds to make them soft and pliable.
Follow these tips, and your Marinated Beef with Fresh Guacamole will be an absolute showstopper!
