Add the king prawns and gently toss them through the marinade. Make sure each prawn receives a good coating.

Cover the bowl and place it in the refrigerator for 20–30 minutes. Avoid leaving the prawns in the acidic marinade for several hours because the lemon juice can affect their texture.
While the prawns marinate, prepare the dip. Combine the mayonnaise, Greek yoghurt, lemon juice, garlic, sweet chilli sauce and herbs in a small bowl.
Season the dip with salt and black pepper, then stir until smooth. Cover and refrigerate until required.

Heat a large frying pan, grill or barbecue until properly hot.
Remove the prawns from the marinade, allowing excess marinade to drain away. If using wooden skewers, thread the prawns onto them before cooking.
Cook the prawns for approximately 2–3 minutes on each side, depending on their size and the cooking method. They should become opaque and develop a lovely golden colour.
Remove the prawns from the heat as soon as they are cooked through. Take care not to overcook them, as they can quickly become firm and chewy.
Transfer the prawns to a warm serving plate and garnish with a little fresh parsley and lemon wedges.
