Prawns have always been nice but nothing special so I decided to experiment with prawns in the kitchen. They cook quickly, look fantastic on the plate and, when treated well, can deliver an enormous amount of flavour without needing a long list of ingredients. Marinated King Prawns have become one of my favourite ways to enjoy them because they are wonderfully simple while still feeling like something special.
I first started playing around with different ways of cooking prawns because I wanted to move beyond the usual pan-fried version. Prawns are incredibly versatile, after all. They can be grilled, barbecued, fried, baked or cooked quickly on a hot plate. Each method gives them a slightly different character. However, I found that a good marinade can make just as much difference as the cooking method itself.
With these Marinated King Prawns, the marinade provides the opportunity to introduce several layers of flavour before the prawns even reach the heat. I enjoy experimenting with different combinations, depending on what else I plan to serve. Sometimes I lean towards fresh and citrusy flavours. On other occasions, I want something with garlic, herbs and a little warmth. The beauty of prawns is that they happily accept all sorts of flavours.
King prawns also have a wonderful appearance. Once cooked, they take on a beautiful colour and immediately make a plate look more inviting. Therefore, this is one of those dishes where presentation requires very little effort. Arrange the prawns neatly on a serving plate, add a small bowl of dipping sauce and perhaps a little fresh garnish, and suddenly you have something that looks far more complicated than it actually was.
I particularly enjoy serving these as a starter. They are light enough to avoid overwhelming the main course, yet they still give everyone something exciting to enjoy at the beginning of the meal. A good dip makes the experience even better. The creamy, sharp or slightly spicy dip can provide a contrast to the marinade, giving each mouthful a little extra interest.
Another reason I keep returning to this dish is the speed. There are times when I want to prepare something impressive without spending half the evening in the kitchen. These prawns fit that situation perfectly. Once everything is prepared, they need very little cooking time. Consequently, they work brilliantly when unexpected guests arrive or when I simply want a quick meal that feels more special than an ordinary weekday dish.
I have also discovered that experimenting with the cooking method can change the result considerably. Grilling can give the prawns a lovely hint of char, while pan cooking creates delicious browned edges. Barbecuing adds a smoky quality that works particularly well when the weather allows outdoor cooking. Meanwhile, oven cooking can be useful when I am preparing several other dishes at the same time.
The important thing, in my experience, is not to overcook them. Prawns need surprisingly little time, and cooking them for too long can leave them firm and chewy. I much prefer them tender, juicy and full of the flavours from the marinade. Watching the colour and texture as they cook has become part of the fun for me.
Although I originally approached this dish as another experiment with prawns, it has become something I make whenever I want an easy starter with plenty of impact. It proves that impressive food does not always require complicated preparation. Sometimes, a handful of well-chosen flavours, good-quality king prawns and a tasty dip are all that is needed.

Marinated King Prawns

Ingredients
Prawn Ingredients:
- 500 g king prawns large peeled and deveined
- 3 tbsp olive oil
- 2 cloves garlic finely minced
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1 tsp dried oregano
- 1 tsp smoked paprika
- ½ tsp chilli flakes
- 1 tbsp fresh parsley finely chopped
- salt
- freshly ground black pepper
Dip Ingredients:
- 100 g mayonnaise
- 50 g Greek yoghurt
- 1 tbsp fresh lemon juice
- 1 clove garlic finely grated
- 1 tsp sweet chilli sauce
- 1 tbsp fresh parsley or chives finely chopped
- salt
- black pepper
Instructions
- Place the olive oil, garlic, lemon juice, lemon zest, oregano, smoked paprika, chilli flakes and parsley into a mixing bowl.3 tbsp olive oil, 1 tbsp fresh lemon juice, 1 tsp lemon zest, 1 tsp dried oregano, 1 tsp smoked paprika, ½ tsp chilli flakes, 2 cloves garlic
- Season with a little salt and freshly ground black pepper, then stir thoroughly until everything combines.salt, freshly ground black pepper
- Add the king prawns and gently toss them through the marinade. Make sure each prawn receives a good coating.500 g king prawns
- Cover the bowl and place it in the refrigerator for 20–30 minutes. Avoid leaving the prawns in the acidic marinade for several hours because the lemon juice can affect their texture.
- While the prawns marinate, prepare the dip. Combine the mayonnaise, Greek yoghurt, lemon juice, garlic, sweet chilli sauce and herbs in a small bowl.1 tbsp fresh parsley, 100 g mayonnaise, 50 g Greek yoghurt, 1 tbsp fresh lemon juice, 1 tsp sweet chilli sauce, 1 clove garlic
- Season the dip with salt and black pepper, then stir until smooth. Cover and refrigerate until required.salt, black pepper
- Heat a large frying pan, grill or barbecue until properly hot.
- Remove the prawns from the marinade, allowing excess marinade to drain away. If using wooden skewers, thread the prawns onto them before cooking.
- Cook the prawns for approximately 2–3 minutes on each side, depending on their size and the cooking method. They should become opaque and develop a lovely golden colour.
- Remove the prawns from the heat as soon as they are cooked through. Take care not to overcook them, as they can quickly become firm and chewy.
- Transfer the prawns to a warm serving plate and garnish with a little fresh parsley and lemon wedges.1 tbsp fresh parsley
- Serve immediately with the prepared dipping sauce.
