Ingredients

tbsp
olive oil
3
cloves
garlic
finely chopped

sprigs
parsley
chopped
4
cups
plum tomatoes
drained and coarsely chopped
1
tbsp
dried oregano
6
whole
anchovy fillets
optional
2
tbsp
tomato paste
salt
to taste
ground pepper
to taste
Instructions
Heat the olive oil in a sauce pan over moderate heat.

Add the garlic and parsley and cook for about 5 minutes, stirring frequently.

Do not brown.
Add the tomatoes, oregano, salt, and pepper, and simmer over low heat for 30 minutes, stirring occasionally.
4 cups plum tomatoes,
1 tbsp dried oregano,
salt,
ground pepper
Add the optional anchovies and tomato paste and stir well.
6 whole anchovy fillets,
2 tbsp tomato paste
Taste and adjust seasoning if necessary.
Serve with chopped parsley as a garnish
