Pasta with Walnut Sauce is a simple recipe that is welcoming spring, summer, autunm and winter. The walnuts add a lovely texture taking this up a level

Ingredients
- 1 cup ricotta cheese 250 ml
- 1 cup walnuts 250 ml, chopped
- 1/2 cup Parmesan 125 ml, grated
- 1/2 cup parsley 125 ml, chopped
- 3 cloves garlic chopped
- 1 lb spaghetti cooked, 450 g
- salt to taste
- ground pepper to taste
Instructions
- Combine all the ingredients except the cooked pasta in an electric blender/processor.
- Blend until fairly smooth - small pieces of nuts add a nice texture.
- Toss with the cooked pasta, adding a little bit of the pasta cooking water to thin the sauce if necessary.
- Serve immediately.
