Ingredients
200
g
linguine
spaghetti

tbsp
vodka

tomato purée

double cream

flat leaf, chopped

Instructions
Place a frying pan over a medium heat and add the oil.
2 tsp olive oil
When hot, add the chorizo/smoked bacon and fry for about 2 minutes until the fat/oil starts to render.
50 g chorizo
Add the shallots and cook for a further 5 minutes.
4 large banana shallots
Add the garlic and chilli (deseeded if you wish to make it less intense) and cook for another minute or so.
2 cloves garlic,
1 whole red chilli
Add a pan of water over a high heat and add salt.
When the water is boiling, cook the pasta according to the instructions.
200 g linguine
Once cooked, drain the pasta over a mug to catch some of the pasta water.
Add the tomato puree to the shallot, garlic etc mixture and combine.
40 g tomato purée
Cook for an additional minute and then add the all important vodka.
3 tbsp vodka
Allow to simmer/bubble for 30 seconds and add the cream.
80 ml double cream
Reduce the heat to a gentle simmer and cook for a final 3 - 4 minutes.
Add the lemon zest and test for seasoning. Add salt and ground pepper if required.
1 fresh lemon
The pasta should be cooked by now so add it to the sauce mixture.
If the sauce needs thinning, add a little of the pasta water.
Bring back to a simmer for 2 minutes then serve
Grate parmesan over the pasta and a scattering of parsley.
½ bunch parsley,
