Prepare all the ingredients before you start cooking. Dice the chicken into even-sized pieces. Chop the plums and discard the stones. Slice the onion and crush the garlic.
Heat the olive oil and butter in a large frying pan over a medium-high heat. When the butter starts to foam, add the diced chicken.

Cook the chicken for 5 to 6 minutes. Stir regularly until the pieces turn golden on the outside and are nearly cooked through.
Add the sliced onion. Cook for 3 minutes until it starts to soften. Stir in the crushed garlic and cook for a further minute.

Add the chopped red plums to the pan. Stir gently so they mix evenly with the chicken and onions.

Pour in the chicken stock and soy sauce. Add the honey, thyme, salt and black pepper. Stir well to combine.

Reduce the heat to medium and simmer for 8 to 10 minutes. During this time the plums will soften and release their juices. The liquid will reduce and form a glossy sauce that coats the chicken.
Taste the sauce and adjust the seasoning if required. If you prefer a sweeter finish, add a little extra honey. For a sharper flavour, add a squeeze of lemon juice.
Scatter over the chopped parsley or basil and serve immediately.
Serving:Serve with fluffy rice, buttered new potatoes, mashed potatoes or egg noodles. Steamed broccoli, green beans or carrots make excellent side dishes.
