Red Plum Chicken

- large frying pan or sauté pan
Ingredients
- 600 g chicken breast diced into bite-sized pieces
- 4 large red plums ripe stones removed and roughly chopped
- 1 medium onion finely sliced
- 2 cloves garlic crushed
- 1 tbsp olive oil
- 1 tbsp butter
- 1 tbsp runny honey
- 2 tbsp light soy sauce
- 100 ml chicken stock
- ½ tsp dried thyme
- ¼ tsp black pepper
- ½ tsp sea salt
- Fresh parsley chopped, for garnish
Instructions
- Prepare all the ingredients before you start cooking. Dice the chicken into even-sized pieces. Chop the plums and discard the stones. Slice the onion and crush the garlic.
- Heat the olive oil and butter in a large frying pan over a medium-high heat. When the butter starts to foam, add the diced chicken.1 tbsp olive oil, 1 tbsp butter, 600 g chicken breast
- Cook the chicken for 5 to 6 minutes. Stir regularly until the pieces turn golden on the outside and are nearly cooked through.
- Add the sliced onion. Cook for 3 minutes until it starts to soften. Stir in the crushed garlic and cook for a further minute.1 medium onion, 2 cloves garlic
- Add the chopped red plums to the pan. Stir gently so they mix evenly with the chicken and onions.4 large red plums
- Pour in the chicken stock and soy sauce. Add the honey, thyme, salt and black pepper. Stir well to combine.1 tbsp runny honey, 2 tbsp light soy sauce, 100 ml chicken stock, ½ tsp dried thyme, ½ tsp sea salt, ¼ tsp black pepper
- Reduce the heat to medium and simmer for 8 to 10 minutes. During this time the plums will soften and release their juices. The liquid will reduce and form a glossy sauce that coats the chicken.
- Taste the sauce and adjust the seasoning if required. If you prefer a sweeter finish, add a little extra honey. For a sharper flavour, add a squeeze of lemon juice.
- Scatter over the chopped parsley or basil and serve immediately.Fresh parsley
