Ingredients

tbsp
shallots
finely chopped

tbsp
unsalted butter

cup
shrimp
or lobster, crab or combination cooked,

large
eggs

cup
milk
cream
8
inch
pastry shell
1/4
cup
Gruyere cheese
grated
ground black pepper

Instructions
Cook the shallots in the butter over moderate heat until they are tender but not browned.

3 tbsp unsalted butter
Add the seafood and continue cooking for 2 minutes, stirring frequently.
1 cup shrimp
Add the salt, pepper and cook for an additional minute.

Remove from the heat and allow to cool a little.
Beat the eggs and the milk/cream together in a bowl and add the seafood mixture, stirring to combine well.
3 large eggs,

Pour this mixture into the pastry shell and sprinkle the cheese on top.
8 inch pastry shell,
1/4 cup Gruyere cheese
Bake in a preheated 375F (190C) for 25 to 30 minutes, until the quiche is puffed and brown.
