Scallions / Spring Onions
Scallions, also known as spring onions or green onions, are one of the most useful and versatile members of the allium family. With their long green stalks and small white bulbs, they occupy a space somewhere between herbs and vegetables, offering a mild onion flavour that can be used raw or cooked. Unlike regular onions, scallions do not develop large bulbs; instead, their entire length—from crisp green tops to tender white ends—is edible and full of flavour.
One of the main reasons scallions are so widely loved is their adaptability. Raw scallions bring a sharp but delicate freshness to salads, sandwiches, and dips. The greens can be used like herbs, while the whites behave more like onions. In fact, if a recipe calls for chives and you don’t have any on hand, scallions can serve as a handy substitute.
