  • Preheat the oven to 200°C (180°C fan/gas mark 6). Pat the chicken pieces dry with paper towels and place them on a large baking tray.
    6 large chicken drumsticks, 6 large chicken thighs, 6 large chicken wings
  • In a small bowl, combine the olive oil, melted butter, honey, chilli powder, cayenne pepper, smoked paprika, garlic powder, onion powder, ground ginger, lemon juice, salt and black pepper. Mix well until all ingredients are fully incorporated.
    2 tbsp olive oil, 2 tbsp butter, 2 tbsp honey, 2 tsp chilli powder, 1 tsp cayenne pepper, 2 tsp smoked paprika, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp ground ginger, 2 tbsp lemon juice, 1 tsp salt, ½ tsp black pepper
  • Using a brush, generously coat the chicken pieces with the baste. Make sure to cover all sides. Set aside about 1/3 of the baste for later use.
  • Place the chicken in the oven and bake for 35-40 minutes, turning the pieces halfway through cooking. After 20 minutes, baste the chicken again with the reserved mixture. Continue baking until the chicken is golden brown and the skin is crispy.
  • For an extra burst of flavour, baste the chicken one final time before removing it from the oven. Garnish with freshly chopped coriander and serve hot.
