Monkfish has to be one of the ugliest creatures on the planet. However, the flesh has a fine texture and sweet flavour that is hard to beat. Monkfish used to be a poor mans fish but has become more expensive than Lobster and rightly so. Like most white fish, tomatoes play a heavy part in many recipes along with meats such as pork and Parma ham. Surprising but they work. Try it.
