Instructions

Prepare the marinade:

  • In a bowl, combine soy sauce, mirin, sake (if using), sugar or honey, garlic, ginger, and sesame oil. Stir well until the sugar dissolves.
    3 tbsp soy sauce, 2 tbsp mirin, 1 tbsp sake, 2 tbsp brown sugar, 2 cloves garlic, 1 tsp fresh ginger, 1 tsp sesame oil

Marinate the beef:

  • Add the sliced beef to the marinade. Mix until all pieces are coated. Leave to marinate for at least 10 minutes. For deeper flavour, it can be left for up to 30 minutes.
    500 g beef sirloin

Cook the vegetables:

  • Heat the vegetable oil in a large frying pan or wok over medium-high heat. Add the onion, broccoli, and peppers. Stir-fry for 4–5 minutes until just tender but still crisp. Remove from the pan and set aside.
    1 tbsp vegetable oil, 1 medium green bell pepper, 1 medium red bell pepper, 1 small broccoli head, 1 small onion

Cook the beef:

  • In the same pan, add the marinated beef along with the marinade. Cook over high heat for 3–4 minutes. Stir frequently until the beef is browned and nearly cooked through.

Combine and glaze:

  • Return the vegetables to the pan. Stir everything together so the sauce coats evenly. If a thicker glaze is preferred, add the cornflour mixture and cook for another 1–2 minutes until the sauce becomes glossy.
    1 tsp cornflour, 2 tbsp water

Finish and serve:

  • Remove from heat. Sprinkle with sesame seeds and sliced spring onions.

  • Serve immediately while hot.
