  • Season the steaks with a little salt and black pepper.
    4 large sirloin beef, salt, black pepper
  • Heat 1 tablespoon of oil in a large frying pan or wok over medium-high heat and cook the steaks for 3–4 minutes per side for medium, or to your preferred doneness.
    2 tbsp vegetable oil
  • Remove from the pan, rest for 5 minutes, then slice thickly.
  • In the same pan, add the remaining oil.

  • Stir-fry the green bell pepper, red onion, and sliced chillies for 3–4 minutes until slightly softened but still vibrant.

  • Combine the cornflour and 1 tbsp of water in a small bowl and stir until mixed

  • Mix the sauce ingredients in a small bowl and pour into the pan with the vegetables.
    3 tbsp tomato ketchup, 2 tbsp soy sauce, 2 tbsp rice vinegar, 2 tbsp brown sugar, 150 ml water
  • Add the cornflour to the pan stirring until it thickens into a glossy sauce.
  • Return the sliced beef to the pan and toss well to coat everything evenly.
  • Serve the chilli beef steaks hot with your choice of sides.
